Ingredients

  • 8 cups flour
  • 2 1/4 cups sugar
  • 3 tablespoons ginger
  • 1 tablespoon cloves
  • 1 tablespoon salt
  • 2 1/4 cups shortening
  • 2 tablespoons baking powder
  • 3 tablespoons cinnamon

Instructions

  1. Sift together twice all ingredients except shortening.
  2. Cut shortening into dry ingredients with 2 knives or a pastry blender until the mixture resembles cornmeal.
  3. Store in a tight jar or can in the refrigerator.
  4. Use the mixture to make gingerbread in an 8-inch square pan.
  5. The mixture will keep for 3 months, as long as the shortening remains sweet.
