Ingredients

  • 2 medium sweet potatoes, peeled and diced
  • 1 Tbsp. fat-free margarine
  • 1 tsp. brown sugar
  • 1/4 tsp. ground ginger or pumpkin pie spice

Instructions

  1. Arrange peeled and diced sweet potatoes in a steaming rack over boiling water.
  2. Cover and steam until tender, about 10-15 minutes.
  3. Remove sweet potatoes and place in a serving dish.
  4. Combine 1 tablespoon fat-free margarine, 1 teaspoon brown sugar, and 1/4 teaspoon ground ginger or pumpkin pie spice.
  5. Blend the ingredients well to create a glaze.
  6. Toss the hot sweet potatoes with the glaze until evenly coated.
