Ingredients

  • 2 acorn squash
  • 1/3 cup fresh orange juice
  • 1/2 cup brown sugar
  • 1/4 cup corn syrup
  • 1/4 cup butter or oleo
  • 2 tablespoons grated lemon rind
  • 1/8 teaspoon salt

Instructions

  1. Cut off the ends of the acorn squash.
  2. Slice the squash crosswise into 1-inch rings and remove the seeds.
  3. Place the squash rings in a single layer in a large, shallow baking dish and add orange juice.
  4. Cover and bake at 350°F (175°C) for 30 minutes.
  5. Combine brown sugar, corn syrup, butter, grated lemon rind, and salt; simmer for 5 minutes.
  6. Pour the glaze over the squash rings and bake uncovered for an additional 15 minutes, basting occasionally.
