Ingredients

  • 1 1/2 cups self-rising cornmeal
  • 1/2 cup oil
  • 2 eggs
  • 1 small can creamed corn
  • 1 cup sour cream
  • 1/2 cup sharp Cheddar cheese
  • 3 tablespoons diced onion

Instructions

  1. Mix all ingredients except the Cheddar cheese.
  2. Pour half of the mixture into a greased iron skillet.
  3. Sprinkle with half (1/4 cup) of Cheddar cheese.
  4. Pour in the remaining half of the corn bread mixture.
  5. Top with the remaining 1/4 cup Cheddar cheese.
  6. Bake at 475°F for 30 minutes.
