Glazed Honey Beets

Ingredients

  • 1 1/2 lb. small beets
  • 2 Tbsp. honey mustard
  • 3 Tbsp. cider vinegar
  • salt
  • pepper
  • 1/2 c. heavy cream

Instructions

  1. Wash the beets and cut the stems to within 2 inches of the beet.
  2. Cook the beets in boiling water for about 12 minutes or until tender.
  3. Allow the beets to cool, then peel them.
  4. Mix honey mustard and cider vinegar to create the glaze.
  5. Drizzle the glaze over the peeled beets.
  6. Whip the heavy cream until soft peaks form.
  7. Serve the beets topped with whipped cream and minced parsley.
  8. Season with salt and pepper to taste.
