Ingredients

  • 16 (1-inch) cooked Butterball turkey pieces (1 lb.)
  • water
  • 1 (20 oz.) can pineapple chunks, drained
  • pineapple juice (from can)
  • 1/2 cup packed brown sugar
  • 2 tablespoons soy sauce
  • 16 slices beef or turkey bacon, cut into halves
  • 2 large red bell peppers, cut into 24 triangles
  • 3 large green bell peppers, cut into 32 triangles

Instructions

  1. Preheat the broiler.
  2. Add water to the pineapple juice to make 1 cup.
  3. Combine the pineapple juice, brown sugar, and soy sauce in a small saucepan.
  4. Bring the mixture to a boil over heat.
  5. Reduce heat to low and simmer for 2 to 3 minutes. Set the glaze aside.
  6. Thread the cooked turkey pieces, pineapple chunks, bell pepper triangles, and bacon halves onto skewers.
  7. Place the skewers under the preheated broiler or on a grill.
  8. Brush the skewers with the prepared glaze during cooking.
  9. Cook until heated through and slightly caramelized, about 8-10 minutes.
  10. Serve over hot cooked rice.
