Ingredients

  • 1 cup cream of chicken or mushroom soup
  • 8 oz sour cream
  • 1 onion
  • 1 stick margarine
  • cornbread stuffing mix

Instructions

  1. Melt margarine and mix with stuffing mix, then place half of the mixture in the bottom of a baking dish.
  2. In a bowl, combine squash, chopped onion, cream of chicken or mushroom soup, and sour cream.
  3. Add shredded carrot to the mixture for color and extra flavor.
  4. Pour the squash mixture over the stuffing in the dish.
  5. Top the casserole with the remaining stuffing mixture.
  6. Bake at 350°F (175°C) for 30 minutes until bubbly and golden.
