Ingredients

  • 1 c. melted shortening
  • 4 c. sifted flour
  • 1/2 c. brown sugar
  • 2 eggs
  • 2 c. shredded coconut
  • 1/2 c. milk
  • 1 c. sugar
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 tsp. cinnamon

Instructions

  1. Mix the melted shortening, sifted flour, brown sugar, and sugar together.
  2. Add the well-beaten eggs and shredded coconut; mix well.
  3. Sift the baking soda, salt, and cinnamon, then add to the mixture and combine thoroughly.
  4. Shape the dough into a roll and refrigerate.
  5. Cut the chilled dough into 1/4-inch thick slices.
  6. Bake the cookies for 10 minutes at 425°F.
