Gloria'S Pineapple Cake

Ingredients

  • 3 sticks butter
  • 3 c. sugar
  • 6 eggs
  • 3 c. flour
  • 1 tsp. baking powder
  • 1/4 tsp. salt
  • 1 tsp. lemon extract
  • 1/4 c. milk
  • 3/4 c. crushed pineapple

Instructions

  1. Sift together flour, baking powder and salt; set aside.
  2. In another bowl, add butter and sugar together; blend well.
  3. Add eggs, one at a time.
  4. Blend well.
  5. Alternately blend milk and flour mixture into butter, sugar and egg mixture.
  6. Add lemon extract.
  7. Beat well.
  8. Fold in pineapple before pouring batter into a well-greased and floured tube pan.
  9. Place in cold oven.
  10. Set temperature to 350° and bake 1 hour to 1 hour and 15 minutes. While cake is baking, mix together 2 tablespoons butter, 1/2 cup brown sugar and crushed pineapple.
  11. Pour on cake.
  12. Place on plate and serve warm.
