Ingredients

  • 4 cups instant potatoes
  • 3 1/2 cups boiling water
  • 4 egg yolks
  • 1 tablespoon butter
  • 4 cups flour

Instructions

  1. Mix the instant potatoes, boiling water, and beaten egg yolks together.
  2. Let the mixture rest for a while.
  3. Add the butter and mix quickly until combined.
  4. Gradually add the flour, one cup at a time, until a large ball of dough forms.
  5. Cut the dough into pieces and roll each piece into a rope.
  6. Cut each rope into pieces about 3/4-inch long.
  7. Use your index and middle fingers to press into each piece, creating an indentation.
  8. Cook the gnocchi in boiling water until they float to the surface and are cooked through.
  9. Remove with a slotted spoon and serve with spaghetti sauce and meatballs.
