Ingredients

  • 2 Tbsp. butter
  • 1 to 2 c. flour
  • 8 eggs
  • 2 c. milk
  • salt and pepper
  • 8 slices bread

Instructions

  1. Hard-boil 6 eggs in a medium saucepan for 10 to 15 minutes. Remove and set aside.
  2. In a large saucepan, melt 2 tablespoons of butter over medium heat.
  3. Whisk in enough flour to absorb all the butter, forming small balls.
  4. Gradually add 2 cups of milk, stirring constantly until the sauce thickens.
  5. Season the sauce with salt and pepper to taste.
  6. Cut the boiled eggs in half lengthwise.
  7. Use a fork to remove the yolks from the egg halves.
  8. Strain the yolks through a fine grater or small colander into a bowl.
  9. Chop the egg whites and add them to the sauce.
  10. Toast the slices of bread and place them on plates.
  11. Pour the egg yolk sauce over the toasted bread.
  12. Push the strained yolks through the colander over the toast using a spoon.
  13. Serve hot.
