- Hard-boil 6 eggs in a medium saucepan for 10 to 15 minutes. Remove and set aside.
- In a large saucepan, melt 2 tablespoons of butter over medium heat.
- Whisk in enough flour to absorb all the butter, forming small balls.
- Gradually add 2 cups of milk, stirring constantly until the sauce thickens.
- Season the sauce with salt and pepper to taste.
- Cut the boiled eggs in half lengthwise.
- Use a fork to remove the yolks from the egg halves.
- Strain the yolks through a fine grater or small colander into a bowl.
- Chop the egg whites and add them to the sauce.
- Toast the slices of bread and place them on plates.
- Pour the egg yolk sauce over the toasted bread.
- Push the strained yolks through the colander over the toast using a spoon.
- Serve hot.
