Ingredients

  • 2 1/2 to 3 lb. chicken, cut up
  • 1 1/2 cups flour
  • salt to taste
  • pepper to taste
  • paprika to taste
  • 1/2 cup margarine
  • 1/2 cup Crisco

Instructions

  1. Combine salt, pepper, paprika, and flour in a bowl.
  2. Add chicken pieces and coat 2 to 3 pieces at a time.
  3. Heat margarine and Crisco in an electric skillet or cast-iron skillet until a drop of water sizzles in it.
  4. Brown the meaty chicken pieces first, then add the remaining pieces.
  5. When lightly browned, reduce heat and add 2 tablespoons of water.
  6. Cover and cook for 30 to 40 minutes.
  7. Uncover the last 10 minutes of cooking.
