- Preheat oven to 350°F (175°C).
- Place the roast in a roasting pan with a cover and sprinkle the onion soup mix all over the roast.
- In a bowl, mix the mushroom soup, water, chopped onion, and jar of sliced mushrooms; stir until well combined.
- Pour the mushroom mixture over the roast.
- Cover the pan and cook in the oven for 1 hour.
- After 1 hour, remove from the oven and turn the roast over.
- Arrange sliced potatoes all around the roast.
- Cover and return to the oven for an additional 1 hour.
- Remove from oven and serve with carrots, corn, or green beans.
