Ingredients

  • 1 (2 to 3 lb.) roast
  • 1 small jar sliced mushrooms
  • 1 small onion, chopped
  • 4 to 5 medium potatoes, sliced 1/2-inch thick
  • 1 package onion soup mix
  • 1 can cream of mushroom soup
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Place the roast in a roasting pan with a cover and sprinkle the onion soup mix all over the roast.
  3. In a bowl, mix the mushroom soup, water, chopped onion, and jar of sliced mushrooms; stir until well combined.
  4. Pour the mushroom mixture over the roast.
  5. Cover the pan and cook in the oven for 1 hour.
  6. After 1 hour, remove from the oven and turn the roast over.
  7. Arrange sliced potatoes all around the roast.
  8. Cover and return to the oven for an additional 1 hour.
  9. Remove from oven and serve with carrots, corn, or green beans.
