Ingredients

  • 2 1/2 Tbsp. margarine
  • 1/4 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1 egg
  • 3/4 cup cooked sieved pumpkin or 5 oz. canned pumpkin
  • 1/2 tsp. vanilla extract
  • 3/4 cup whole wheat flour
  • 1 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1/4 tsp. ginger
  • 1/2 cup raisins

Instructions

  1. In a mixing bowl, cream margarine with granulated sugar and brown sugar.
  2. Beat in the egg, cooked sieved pumpkin, and vanilla extract.
  3. Sift together whole wheat flour, baking powder, baking soda, cinnamon, nutmeg, and ginger into a separate bowl.
  4. Add the flour mixture to the pumpkin batter and stir in raisins.
  5. Drop teaspoonfuls of the batter onto lightly greased baking sheets.
  6. Bake in a 375°F (190°C) oven for 12 to 15 minutes.
  7. Cool and serve.
