  • 1/2 pt breadcrumbs
  • 3 eggs

Instructions

  1. Butter a 2-quart pie dish and cover the bottom with a layer of Grace Seville orange marmalade.
  2. Heat together the butter, milk, and 2 teaspoons of sugar until warm.
  3. Add the breadcrumbs to the mixture and leave to stand for 10 minutes.
  4. Beat together 1 whole egg and 2 egg yolks; stir well into the breadcrumb mixture.
  5. Pour half of the breadcrumb mixture into the prepared dish.
  6. Add another layer of Grace Seville orange marmalade over the mixture.
  7. Bake in a moderate oven at 350°F (180°C) until the mixture is set.
  8. Whip egg whites stiffly, then fold in the last quantity of sugar to make a meringue.
  9. Bake in a very cool oven at 290°F (145°C) for approximately 20 to 30 minutes, until the meringue is brown and crisp.

Tips & Substitutions

For a richer flavor, consider using homemade breadcrumbs or adding a hint of vanilla extract to the milk mixture. If you don't have Seville orange marmalade, any tart marmalade can work as a substitute. Ensure to whip the egg whites until stiff peaks form for a perfectly airy meringue. For an extra twist, you might add a sprinkle of nutmeg or cinnamon to the meringue.

Serving Suggestions

Serve the pudding warm, topped with a dollop of whipped cream or vanilla ice cream for added indulgence. This dish pairs beautifully with Caribbean Pineapple Ice Cream for a tropical dessert experience. You can also accompany it with a light fruit salad for a refreshing contrast.

Storage & Reheating

Leftover Grace Marmalade Pudding can be stored in an airtight container in the refrigerator for up to three days. To reheat, place individual portions in the microwave for about 20-30 seconds or in a preheated oven at 300°F (150°C) until warmed through. Avoid reheating the meringue, as it may lose its crispness.

Frequently Asked Questions

Can I make this pudding ahead of time?

Yes, you can prepare the pudding and store it in the refrigerator before baking. Just keep the meringue separate until you're ready to bake to ensure it stays fluffy. When ready, simply bake as directed, adding the meringue just before the final bake.

What can I use instead of breadcrumbs?

If you need a gluten-free option, try using crushed gluten-free cookies or almond flour as a substitute for breadcrumbs. This will change the texture slightly but will still yield a delicious result.

Can I add other fruits to the pudding?

Absolutely! You can incorporate fruits like chopped apples or berries into the breadcrumb mixture for added flavor and texture. Just be mindful of the moisture content, as too many fresh fruits can affect the pudding's consistency.
