A tangy, sweet relish with green tomatoes, onions, and peppers, perfect for adding zest to sandwiches, burgers, or as a flavorful condiment for various dishes.

Ingredients

  • 2 qt. green tomatoes
  • 1 pt. chopped onions
  • 2 red peppers, chopped
  • 4 c. sugar
  • 1 pt. vinegar
  • 1/4 pkg. mixed spice
  • 1/4 c. (scant) salt

Instructions

  1. Scald the green tomatoes for 15 minutes.
  2. Drain the tomatoes well.
  3. Add chopped onions, chopped red peppers, sugar, vinegar, mixed spice, and salt to the tomatoes.
  4. Cook the mixture slowly together for 30 minutes.
  5. Seal the hot relish in sterilized jars.
