Ingredients

  • 1/2 cup butter or margarine, softened
  • 2 cups sugar
  • 8 eggs
  • 2 (20 oz.) cans crushed pineapple, drained
  • 3 tablespoons lemon juice
  • 10 slices day-old white bread, cubed
  • 1/2 cup walnuts or pecans, chopped
  • cinnamon

Instructions

  1. Preheat oven to 325°F (163°C).
  2. In a large mixing bowl, cream butter and sugar until smooth.
  3. Add eggs one at a time, beating well after each addition.
  4. Stir in drained crushed pineapple and lemon juice.
  5. Fold in the cubed bread slices.
  6. Pour the mixture into a greased 13 x 9 x 2-inch baking dish.
  7. Bake uncovered for 35 to 40 minutes or until the pudding is set.
  8. Sprinkle cinnamon over the top before serving.
