Ingredients

  • 4 Tbsp. bacon drippings
  • potatoes
  • 1 medium-sized onion

Instructions

  1. Melt bacon drippings into a large heavy skillet.
  2. Slice enough potatoes to fill the skillet.
  3. Add a medium-sized onion, chopped coarse.
  4. Cook over medium heat, stirring with a spatula and letting the potatoes brown.
  5. Cover the skillet.
  6. Add hot water as needed, in small amounts.
  7. Cook until the potatoes are done.
