Ingredients

  • 2 cups mixed dried beans
  • 2 cups diced ham or sliced smoked sausage
  • 1 clove garlic, minced
  • 1 (28 oz.) can tomatoes
  • 1/2 tablespoon salt
  • 2 quarts water
  • 1 large onion
  • 1 teaspoon chili powder
  • 1 to 2 tablespoons lemon juice

Instructions

  1. Rinse at least 7 varieties of dried beans (such as Great Northern, navy, black turtle, pinto, red, pink, kidney, yellow and green split peas). Place beans in a large kettle, cover with water, and soak overnight.
  2. Drain the soaked beans.
  3. Add 2 quarts of water and diced ham or sliced smoked sausage to the kettle with the beans.
  4. Simmer the mixture for 3 hours.
  5. Add chopped onion, minced garlic, chili powder, canned tomatoes, and lemon juice to the soup.
  6. Continue simmering for another 45 minutes.
  7. Season with salt and pepper as desired before serving.
