Ingredients

  • 12 ears tender corn
  • 2 Tbsp. Crisco or other cooking oil
  • 1 medium onion, finely chopped
  • 1 medium bell pepper, finely chopped
  • 1 Tbsp. salt or to taste
  • pepper to taste
  • 1 to 3 medium tomatoes, peeled and chopped (optional)

Instructions

  1. Cut kernels from the corn cobs twice if small; three times if large, then slightly scrape the cob.
  2. Barely heat cooking oil in a 2-quart pot. Add chopped onion and bell pepper and cook over low heat until the onion is clear, about 15 to 20 minutes.
  3. Stir occasionally during cooking.
  4. Add salt to the corn, then add the corn to the onion and bell pepper mixture.
  5. Stir often to avoid scorching.
  6. Cook until the kernels are clear.
  7. Add pepper and chopped tomatoes.
  8. Cover the mixture when it starts to bubble around the edges, reduce heat to low, and cook for 20 to 30 minutes.
