Ingredients

  • 1 lb. raisins
  • 1 lb. coconut
  • 1 lb. chopped pecans
  • 1 lb. butter
  • 2 cups sugar
  • 10 eggs
  • 3 cups flour
  • 1 teaspoon vanilla

Instructions

  1. Mix the raisins, coconut, and chopped pecans with 1 cup of flour and set aside.
  2. Cream the butter and sugar until light and fluffy.
  3. Add eggs, one or two at a time, beating well after each addition.
  4. Stir in the remaining flour and beat until combined.
  5. Add vanilla extract and mix well.
  6. Fold in the fruit and nut mixture.
  7. Pour the batter into a greased and floured tube pan.
  8. Bake in a preheated oven at 325°F (160°C) for about 1 1/2 hours, or until a toothpick inserted into the center comes out clean.
