- Activate the yeast by dissolving 2 pkg. of yeast in 1/4 cup warm water with 2 tablespoons sugar or mashed potato for diabetics, and let it sit until frothy.
- In a large mixing bowl, beat 2 eggs and add 2 teaspoons salt and 3/4 cup shortening, mixing well.
- Gradually add 5 to 7 cups of plain flour to the mixture, kneading until a soft dough forms.
- Cover the dough and let it rise in a warm place until doubled in size, about 1 to 1.5 hours.
- Punch down the dough and roll it out on a floured surface into a rectangle.
- Spread 1 stick of margarine over the dough and then roll it up tightly.
- Cut the rolled dough into slices and place them on a greased baking dish.
- Bake in a preheated oven at 375°F (190°C) for about 20 minutes until golden brown.
