Grapefruit-Avocado Salad

A refreshing grapefruit-avocado salad layered with gelatin and cream cheese, offering a delightful balance of citrus and creamy textures, perfect for brunch or light gatherings.

Ingredients

  • 1 cup sugar
  • 1 cup water
  • 1 cup grapefruit juice
  • 2 envelopes Knox gelatin
  • 9 tablespoons water
  • 1 ripe avocado, peeled and sliced
  • 4 cups grapefruit sections
  • 1 (8 oz.) package cream cheese

Instructions

  1. Bring sugar, 1 cup water, and grapefruit juice to a boil.
  2. Dissolve 2 envelopes of Knox gelatin in 9 tablespoons of water and add to the boiling mixture. Set aside.
  3. Grease a pan with oil and arrange avocado slices in the bottom.
  4. Pour half of the gelatin mixture over the avocado slices and let it set until firm.
  5. Spread the blended cream cheese and mayonnaise mixture over the gelatin layer.
  6. Drain grapefruit sections thoroughly and arrange them over the cream cheese layer.
  7. Pour the remaining gelatin over the grapefruit sections.
  8. Cover and refrigerate overnight until fully set.
  9. Cut into squares and carefully turn out onto lettuce leaves using a spatula.
  10. Serve and enjoy this very good dish!
