Grapefruit-Avocado Salad
A refreshing grapefruit-avocado salad layered with gelatin and cream cheese, offering a delightful balance of citrus and creamy textures, perfect for brunch or light gatherings.

Instructions
- Bring sugar, 1 cup water, and grapefruit juice to a boil.
- Dissolve 2 envelopes of Knox gelatin in 9 tablespoons of water and add to the boiling mixture. Set aside.
- Grease a pan with oil and arrange avocado slices in the bottom.
- Pour half of the gelatin mixture over the avocado slices and let it set until firm.
- Spread the blended cream cheese and mayonnaise mixture over the gelatin layer.
- Drain grapefruit sections thoroughly and arrange them over the cream cheese layer.
- Pour the remaining gelatin over the grapefruit sections.
- Cover and refrigerate overnight until fully set.
- Cut into squares and carefully turn out onto lettuce leaves using a spatula.
- Serve and enjoy this very good dish!
