- Combine sugar, egg whites, light corn syrup, salt, and grated grapefruit rind in the top of a double boiler.
- Beat at low speed of an electric mixer for 30 seconds or just until mixed.
- Place over boiling water.
- Beat constantly at high speed for 7 minutes or until stiff peaks form.
- Remove from heat.
- Add grapefruit rind and vanilla.
- Beat for 1 to 2 minutes or until frosting is thick enough to spread.
