Ingredients

  • 1 1/2 cups sugar
  • 2 egg whites
  • 1 tablespoon light corn syrup
  • 1/8 teaspoon salt
  • 1 tablespoon grated grapefruit rind
  • 2 teaspoons vanilla

Instructions

  1. Combine sugar, egg whites, light corn syrup, salt, and grated grapefruit rind in the top of a double boiler.
  2. Beat at low speed of an electric mixer for 30 seconds or just until mixed.
  3. Place over boiling water.
  4. Beat constantly at high speed for 7 minutes or until stiff peaks form.
  5. Remove from heat.
  6. Add grapefruit rind and vanilla.
  7. Beat for 1 to 2 minutes or until frosting is thick enough to spread.
