A refreshing grapefruit gelatin salad with pineapple juice and pecans, offering a sweet-tart flavor perfect for light, fruity desserts or brunch gatherings.

Ingredients

  • 4 packages Knox unflavored gelatin
  • 1 cup cold water
  • 1 cup sugar
  • 2 cups pineapple juice
  • 4 cups grapefruit sections
  • 1 cup pecans

Instructions

  1. Dilute sugar in hot pineapple juice.
  2. Dissolve gelatin in cold water.
  3. Mix the dissolved gelatin with the sugar and pineapple juice.
  4. Add grapefruit sections and chopped pecans to the mixture.
  5. Pour into a mold, optionally sprayed with Pam, and refrigerate until set.
  6. Serve chilled.
