Ingredients

  • 2 egg whites
  • 3/4 cup sugar
  • 1/2 teaspoon cream of tartar
  • dash of salt
  • 1 teaspoon creme de menthe
  • 6 ounces chocolate chips
  • green food coloring

Instructions

  1. Preheat oven to 375°F.
  2. Combine egg whites, sugar, cream of tartar, and salt in a mixing bowl and beat until stiff peaks form.
  3. Gently fold in creme de menthe, chocolate chips, and green food coloring.
  4. Drop by teaspoonfuls onto foil-covered cookie sheets.
  5. Turn off the oven and leave the cookies inside overnight to dry out.
  6. Store in tins between layers of wax paper.
  7. Cookies may be frozen for longer storage.
