Ingredients

  • 2 c. flour
  • 2 sticks margarine
  • 6 oz. cream cheese
  • 1 1/2 c. light brown sugar
  • 2 eggs
  • 2 tsp. vanilla
  • pinch of salt
  • 2 Tbsp. melted margarine

Instructions

  1. Mix flour, margarine, and cream cheese and refrigerate.
  2. Mix light brown sugar, eggs, vanilla, salt, and melted margarine.
  3. Cook the sugar mixture over low heat, watching closely as it burns easily.
  4. Add walnuts to the cooked mixture.
  5. Roll out the dough to 1/8-inch thickness.
  6. Cut out rounds with a scalloped cookie cutter.
  7. Press the dough rounds into 1-inch muffin tins.
  8. Drop 1 teaspoon of filling into each cup, filling about 3/4 full as they will swell.
  9. Bake at 325°F for 20 to 25 minutes, avoiding overbrowning.
