Gravlaks is a traditional Scandinavian cured salmon dish featuring dill, white pepper, and a hint of cognac, perfect for elegant appetizers or festive occasions.

Ingredients

  • 2 lb. unskinned salmon fillet
  • 1/4 c. salad oil
  • 1/3 c. sugar
  • 1/3 c. salt
  • 1 1/2 Tbsp. whole white pepper
  • 1/4 c. cognac (optional)
  • 1 small red onion
  • 2 to 3 c. packed fresh dill sprigs

Instructions

  1. Rub the salmon fillet with salad oil.
  2. Mix sugar, salt, and crushed white pepper.
  3. Lightly rub the mixture onto the fish.
  4. Lay the fish, skin down, in a glass baking dish.
  5. Pat the remaining mixture on top of the fish; spoon cognac over it if using.
  6. Place thinly sliced red onion and 2 cups of packed dill on top of the fish.
  7. Cover the dish with plastic wrap and chill for 12 hours, basting with juices 3 to 4 times.
  8. Turn the fish over, placing onion and dill underneath.
  9. Cover and chill for another 12 hours, basting again.
  10. After a total of 24 hours, the gravlaks is ready to serve.
  11. Slice paper-thin or remove from brine and keep refrigerated.
