Ingredients

  • 3 cups lobster meat
  • 1 cup milk
  • 1/4 cup butter
  • 2 tablespoons flour
  • 3 egg yolks
  • 1/2 cup cream
  • 1/2 cup soft bread crumbs
  • 1/2 teaspoon lemon juice
  • 3 tablespoons sherry
  • 1 teaspoon salt
  • 1/2 teaspoon cayenne pepper
  • 1/2 cup Parmesan cheese

Instructions

  1. Boil lobsters and remove the meat.
  2. Scald the milk.
  3. Melt butter in a skillet and cook the lobster meat for 5 minutes.
  4. Add flour, then the milk and stir until blended.
  5. Combine egg yolks with cream and bread crumbs, then add to the lobster mixture and cook until thickened.
  6. Add lemon juice, sherry, salt, and cayenne pepper.
  7. Fill lobster shells with the mixture and place in a baking pan.
  8. If no shells are available, use a shallow casserole dish.
  9. Sprinkle Parmesan cheese on top and cook under a broiler until bubbly and hot.
