Ingredients

  • 6 eggs
  • 2 cups milk
  • 6 tablespoons butter, melted
  • 2 cups flour
  • 3/4 teaspoon salt

Instructions

  1. Break eggs into a mixer bowl and beat until frothy.
  2. Beat in milk and melted butter.
  3. Slowly beat in flour and salt until batter is smooth.
  4. If batter becomes lumpy, strain it to ensure it is light and smooth.
  5. Prepare batter ahead of time and store in a covered pitcher if desired.
  6. Stir the batter before pouring into greased custard cups, filling each to within 1/2 inch of the top.
  7. Arrange cups on a cookie sheet for easier handling.
  8. Preheat the oven to 400°F (200°C).
  9. Bake until popovers are very dark brown and well done, about 45 minutes for 4-ounce cups or 1 hour for 6-ounce cups.
