- Break eggs into a mixer bowl and beat until frothy.
- Beat in milk and melted butter.
- Slowly beat in flour and salt until batter is smooth.
- If batter becomes lumpy, strain it to ensure it is light and smooth.
- Prepare batter ahead of time and store in a covered pitcher if desired.
- Stir the batter before pouring into greased custard cups, filling each to within 1/2 inch of the top.
- Arrange cups on a cookie sheet for easier handling.
- Preheat the oven to 400°F (200°C).
- Bake until popovers are very dark brown and well done, about 45 minutes for 4-ounce cups or 1 hour for 6-ounce cups.
