Ingredients

  • 2 quarts water
  • 1 teaspoon salt
  • 2 pounds tiny green beans
  • 1/4 cup butter or margarine
  • 2 tablespoons grated lemon rind
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon pepper

Instructions

  1. Bring 2 quarts of water to a boil in a Dutch oven; add salt and green beans.
  2. Cook the green beans for 7 to 8 minutes; then drain.
  3. Plunge the green beans into ice water to stop the cooking process; drain again.
  4. In a small saucepan, melt the butter or margarine over low heat.
  5. Stir in the grated lemon rind and lemon juice into the melted butter.
  6. Pour the lemon butter mixture over the cooked green beans.
  7. Sprinkle with pepper and toss to coat evenly.
  8. Serve immediately or chilled.
