Ingredients

  • 10 eggs
  • 2 cups cottage cheese
  • 2 cups monterey jack or cheddar cheese
  • 2 4.5 oz. cans chopped green chiles
  • 1/2 cup flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Break eggs into a large bowl and beat until light.
  2. Add cottage cheese, shredded cheese, chopped green chiles, flour, baking powder, and salt; blend thoroughly.
  3. Pour the mixture into a well-greased 2-quart baking dish.
  4. Bake in a 350°F (175°C) oven for 1 hour, or until the top is browned and the center is firm.
  5. Cool for 5 minutes before slicing.
  6. Serve with salsa and sour cream.
