Ingredients

  • 1 box Jiffy cornbread mix
  • 3/4 cup cottage cheese
  • 1 egg
  • 1 box frozen broccoli
  • 1 stick butter

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Thaw and chop the frozen broccoli.
  3. In a mixing bowl, combine melted butter, cornbread mix, cottage cheese, and egg.
  4. Add the chopped broccoli to the mixture and stir until well combined.
  5. Pour the batter into a greased skillet or square pan.
  6. Bake until golden brown and a toothpick inserted in the center comes out clean, approximately 25 minutes.
