Ingredients

  • 1 large can crushed pineapple
  • 1 cup sugar
  • 1/2 lemon (juice)
  • 1 envelope gelatin
  • 1/2 cup water
  • 1/2 pint whipping cream
  • 2 cups Longhorn cheese
  • 1/2 cup pecans
  • green food coloring

Instructions

  1. Soften gelatin in cold water.
  2. Heat crushed pineapple, sugar, and lemon juice together.
  3. Mix the dissolved gelatin into the heated pineapple mixture.
  4. Refrigerate until set or overnight.
  5. Whip the cream until soft peaks form; fold in Longhorn cheese, pecans, and green food coloring.
  6. Combine the whipped mixture with the set pineapple gelatin mixture.
  7. Spoon into a pretty glass bowl or serve on a bed of lettuce leaves.
