Ingredients

  • 500 g raisins
  • 100 ml rum
  • 500 g flour
  • 1 Tbsp baking powder
  • 1 Tbsp vanilla extract
  • pinch of salt
  • 4 drops almond extract
  • pinch ground cloves
  • 150 g diced candied lemon peel
  • 100 g diced candied orange peel
  • pinch ground cardamom
  • pinch ground ginger
  • pinch ground nutmeg
  • pinch ground cinnamon
  • grated orange peel
  • 2 eggs
  • 175 g soft unsalted butter

Instructions

  1. Soak raisins in rum in a jar overnight.
  2. Mix together flour, baking powder, vanilla, salt, almond extract, ground cloves, ground cardamom, ground ginger, ground nutmeg, ground cinnamon, and grated orange peel.
  3. Add eggs and soft butter to the dry ingredients and knead with a mixer until combined.
  4. Turn out the dough onto a floured surface and knead by hand.
  5. Add the soaked raisins and work the dough until smooth and evenly incorporated.
  6. Shape the dough into a loaf and place on a baking sheet lined with greaseproof paper.
  7. Bake at 160°C to 180°C for 50 to 60 minutes.
  8. Remove from oven, brush with melted butter, and dust with icing sugar before serving.
