Ingredients

  • 1/2 cup finely chopped onions
  • 2 (10 oz.) packages frozen chopped spinach, thawed and drained
  • 1 cup feta cheese, crumbled
  • 1 teaspoon dill weed
  • 16 filo dough sheets at room temperature
  • 1 cup margarine
  • 2 eggs, slightly beaten
  • 2 tablespoons chopped parsley

Instructions

  1. In a large skillet, saute chopped onions in 1/4 cup margarine until tender.
  2. Stir in the thawed and drained chopped spinach.
  3. Remove from heat and let cool slightly.
  4. Preheat oven to 350°F (175°C).
  5. Brush a 9-inch baking dish with margarine.
  6. Layer 8 filo sheets in the dish, brushing each sheet with margarine before adding the next.
  7. Spread the spinach mixture evenly over the layered filo sheets.
  8. In a small bowl, beat eggs and mix with crumbled feta, chopped parsley, and dill weed.
  9. Pour the egg mixture over the spinach filling.
  10. Cover with remaining filo sheets, brushing each with margarine.
  11. Trim excess filo and tuck edges in.
  12. Bake for 30 minutes or until golden brown.
  13. Let cool slightly before serving.
