Ingredients

  • 10 to 12 green tomatoes (2 to 3 inches in diameter)
  • 1 cup Caesar salad dressing
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 cup cornmeal
  • 1 cup flour
  • 1 cup vegetable oil
  • 16 oz Velveeta cheese, cubed
  • 1/2 cup real mayonnaise

Instructions

  1. Using a paring knife, trim vine cores from tomatoes and slice in 1/4-inch thick rounds.
  2. Place sliced tomatoes in a large mixing bowl and add Caesar salad dressing, salt, pepper, and garlic powder.
  3. Toss lightly with a wooden spoon to evenly coat each slice and chill for 30 minutes.
  4. Mix cornmeal and flour in a shallow dish.
  5. Pour vegetable oil into a heavy skillet over medium heat and heat until hot.
  6. Rinse tomato slices lightly with warm water in a strainer and allow to drain.
  7. Coat each tomato slice in the cornmeal-flour mixture.
  8. Fry coated tomato slices in hot oil until golden brown and crispy, about 2-3 minutes per side.
  9. Drain on paper towels and serve with Velveeta cheese dip or mayonnaise-based sauce.
