- Using a paring knife, trim vine cores from tomatoes and slice in 1/4-inch thick rounds.
- Place sliced tomatoes in a large mixing bowl and add Caesar salad dressing, salt, pepper, and garlic powder.
- Toss lightly with a wooden spoon to evenly coat each slice and chill for 30 minutes.
- Mix cornmeal and flour in a shallow dish.
- Pour vegetable oil into a heavy skillet over medium heat and heat until hot.
- Rinse tomato slices lightly with warm water in a strainer and allow to drain.
- Coat each tomato slice in the cornmeal-flour mixture.
- Fry coated tomato slices in hot oil until golden brown and crispy, about 2-3 minutes per side.
- Drain on paper towels and serve with Velveeta cheese dip or mayonnaise-based sauce.
