Ingredients

  • 2 c. flour
  • 1/4 c. sugar
  • 1 tsp. salt
  • 1 1/2 Tbsp. baking powder
  • 1 egg
  • 2 c. milk
  • 2 Tbsp. melted butter

Instructions

  1. Mix and sift the dry ingredients: flour, sugar, salt, and baking powder.
  2. Beat the egg, add milk, and pour slowly into the dry mixture while stirring.
  3. Beat the mixture thoroughly until smooth.
  4. Add melted butter and stir well.
  5. Drop spoonfuls of batter onto a greased hot griddle.
  6. Cook on one side until puffed, bubbles form, and edges are cooked, then turn and cook the other side.
  7. Spread with butter and maple syrup before serving.
