Ingredients

  • 1 lb. large carrots, peeled
  • 1 tsp. olive oil
  • 1/8 tsp. salt
  • 1/8 tsp. ground black pepper

Instructions

  1. Heat coals in outdoor grill until hot.
  2. Lightly oil or coat grill rack with nonstick vegetable cooking spray and set aside.
  3. Peel the carrots and toss them with olive oil, salt, and black pepper.
  4. Place the carrots on the prepared grill rack.
  5. Grill the carrots for about 15 minutes, turning occasionally, until tender and slightly charred.
