Grilled Corned Beef

Ingredients

  • 4 bay leaves
  • 4 red chilies (whole)
  • 3 cinnamon sticks
  • 12 peppercorns (whole)
  • 3 cloves garlic (whole)
  • 1 large onion (whole)
  • 4 to 5 lb. corned beef
  • 1/2 c. brown sugar
  • 1/2 tsp. ground cloves
  • 1/2 tsp. ginger
  • 1/2 tsp. mustard
  • 1/4 tsp. celery salt
  • 1/4 tsp. caraway seed

Instructions

  1. In stock pot, place corned beef, bay leaves, chilies, cinnamon sticks, peppercorns, garlic and onion and cover with water.
  2. Boil for 4 to 5 hours.
  3. Combine remaining ingredients and set aside. When corned beef is removed from pot and still hot, rub remaining ingredient mixture all over.
  4. Place on grill and cook until crunchy, about 5 to 10 minutes.
