Grilled Stuffed Tomatoes

Grilled stuffed tomatoes are a flavorful appetizer or side dish featuring tender tomatoes filled with a cheesy herb mixture. Ingredients

  • 4 small tomatoes
  • 3 Tbsp. grated Parmesan cheese, divided
  • 2 Tbsp. chopped parsley, divided
  • 1/8 tsp. pepper
  • 3 Tbsp. seasoned bread crumbs

Instructions

  1. Cut a thin slice from the stem end of each tomato and remove the pulp to form shallow cups.
  2. Remove seeds and chop the tomato pulp.
  3. Combine the chopped pulp with 2 tablespoons of Parmesan cheese, 1 tablespoon of chopped parsley, and pepper.
  4. Fill the tomato cups with the mixture.
  5. Combine the bread crumbs, remaining Parmesan cheese, and parsley.
  6. Spoon the bread crumb mixture evenly over the filled tomatoes.
  7. Place the stuffed tomatoes in a disposable foil pan.
  8. Cover loosely with foil.
  9. Cook over medium coals for 15 minutes or until heated through.
