Ingredients

  • 2 lb. zucchini, sliced
  • 1 tsp. sugar
  • 2 Tbsp. flour
  • 1 c. sour cream
  • 2 Tbsp. butter
  • 2 tsp. dill, finely chopped
  • 1/2 tsp. salt
  • 2 tsp. vinegar

Instructions

  1. Sprinkle zucchini slices with salt and let stand for 30 minutes.
  2. Spread the salted zucchini on paper towels and pat dry.
  3. Melt butter in a saucepan and add the zucchini slices.
  4. Toss zucchini until well coated with butter.
  5. Cover and simmer over low heat for 10 minutes until barely tender.
  6. Meanwhile, beat flour into sour cream until smooth.
  7. Pour the sour cream mixture over the zucchini in the saucepan.
  8. Stir gently and simmer for 2 to 3 minutes until thick and smooth.
  9. Stir in sugar, vinegar, and finely chopped dill.
