Ground Beef Medley

Ingredients

  • 1 lb. ground beef
  • 1 medium finely chopped onion
  • 1 small finely chopped green pepper
  • 1 c. uncooked elbow macaroni
  • 1 c. tomato juice
  • 1 can whole corn, drained
  • 1/2 c. ketchup or tomato paste
  • 1/2 tsp. chili powder
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 envelope onion soup mix

Instructions

  1. In colander in 3-quart casserole, microwave (High) ground beef, onion and green pepper for 4 to 6 minutes, stirring twice. Pour off drippings.
  2. Blend with macaroni, tomato juice, corn, water, ketchup, chili powder, salt and pepper.
  3. Microwave (High) covered, 8 to 10 minutes, stirring halfway through cooking. Sprinkle top with soup mix.
  4. Microwave (High), covered 6 to 8 minutes.
  5. Rest, covered, 5 to 10 minutes.
  6. Serves 4 to 6.
