Ingredients

  • grouse (one per person)
  • 1/4 lb. stick butter or margarine
  • 2 tsp. Worcestershire sauce
  • juice of 1/2 lemon
  • 1 large garlic clove
  • 1/2 tsp. finely ground black pepper

Instructions

  1. Split the grouse in half along the keel bone.
  2. Prepare a sauce by putting butter, Worcestershire sauce, lemon juice, crushed garlic, and black pepper in a saucepan and melting everything together.
  3. When the coals are ready, place the unseasoned grouse halves on the grill over medium hot coals.
  4. Turn the grouse halves frequently so they don't burn.
  5. Place the saucepan with the sauce on one side of the grill to melt the butter and blend the ingredients.
  6. Stir the sauce occasionally during grilling.
  7. Begin basting the grouse halves with the sauce once they are browning nicely, first on one side then the other.
  8. Cook until you think the grouse are done, noting that they require less cooking time than chicken due to lower fat content.
  9. Add salt to taste before serving.
