Ingredients

  • 6 medium tomatoes, peeled
  • 2 tsp. salt
  • 1 medium onion, chopped finely
  • 2 tsp. lemon juice
  • 1 or 2 cans medium green chilies, chopped fine
  • 2 very ripe medium avocados
  • 3 crisp slices bacon

Instructions

  1. Core the tomatoes and scoop out the centers.
  2. Sprinkle the insides with 1/2 teaspoon salt and turn over to drain.
  3. Chill the tomatoes.
  4. Chop the tomato centers finely.
  5. Add chopped onion, chopped chilies, lemon juice, and salt to the chopped tomato centers and mix.
  6. Just before serving, mash the avocados and blend into the tomato mixture.
  7. Fill the tomato cups with the mixture.
  8. Crumble the bacon slices and top the filled tomatoes.
  9. Serve on lettuce leaves.
