Ingredients

  • 8 oz. box corn muffin mix
  • 1/4 cup all-purpose flour
  • 2 Tbsp. chili powder
  • 1 egg
  • 3 Tbsp. milk
  • 16 oz. can refried beans
  • 15 oz. can chili without beans

Instructions

  1. Preheat oven to 400 F. Grease a 9 x 13 inch baking pan.
  2. Mix the corn muffin mix, flour, and chili powder in a bowl.
  3. Beat in the egg and milk until the batter is smooth.
  4. Pat the batter into the prepared pan with your hands to form a crust.
  5. Spread the refried beans evenly over the crust.
  6. Pour the chili without beans over the refried beans layer.
  7. Sprinkle with cheese on top.
  8. Bake for 15-20 minutes until the cheese is melted and the crust is firm.
  9. Remove from oven and let cool for 10 minutes.
  10. Cut into squares and serve. Optional toppings can be added before serving.
