Ingredients

  • 1 lb. ham steak or 1 lb. ham bone/hock with meaty scraps
  • 1/2 (8 oz.) bag dried lima beans
  • 1 large onion, chopped
  • salt

Instructions

  1. Rinse dried lima beans in a colander and remove any stones or other non-bean matter.
  2. In a Dutch oven, bring beans, ham, and enough water to fill the pan three-quarters full to a boil.
  3. Reduce heat to medium-low and add the chopped onion, salt, pepper, and a generous sprinkle of dried red pepper to taste.
  4. Cook over low heat, stirring occasionally, until beans are tender, which may take from 1 to 3 hours.
  5. Add additional water as needed to prevent mixture from sticking to the pan.
