Delightful hamantashen cookies with fruity preserves and a tender, flaky dough, perfect for celebrating Jewish holidays or enjoying as a sweet treat with family and friends.

Ingredients

  • 4 cups flour
  • 4 eggs
  • 3/4 cup sugar
  • 1 cup margarine, softened
  • 1 tablespoon orange juice
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla
  • pinch of salt
  • 1 teaspoon orange rind
  • 1 pound strawberry or apricot preserves

Instructions

  1. Preheat oven to 350°F (175°C). Grease cookie sheets.
  2. Place all ingredients in a large bowl and beat together until well combined. Adjust with more juice or flour to achieve the right dough consistency.
  3. Form the dough into a ball, then divide into 4 equal parts.
  4. On a floured surface, roll out each portion to about 1/8 inch thickness.
  5. Using a 3-inch round cutter, cut out circles from the dough.
  6. Place 1/2 to 2/3 teaspoon of preserves in the center of each circle.
  7. To shape into a triangle, bring up the right and left sides to meet at the center above the filling, then fold the top flap down and pinch edges tightly.
  8. Arrange the shaped cookies on the prepared cookie sheets about 1 inch apart.
  9. Bake in the preheated oven for 20 minutes or until golden brown.
