Cucumber Bites

Cucumber bites are refreshing and light, featuring creamy yogurt and sour cream filling with crunchy carrots and radishes, perfect as a healthy appetizer or snack for gatherings.

Ingredients

  • 1 large cucumber
  • 1 cup plain low-fat yogurt
  • 1/2 cup lite sour cream
  • 1/4 cup shredded carrots
  • 3 tablespoons finely chopped radishes
  • 1 tablespoon finely chopped parsley
  • salt and pepper to taste

Instructions

  1. Cut the cucumber into 1/2-inch slices.
  2. Hollow out about 1/2 inch of the center of each cucumber slice.
  3. Chop the cucumber pulp and combine it with the remaining ingredients: yogurt, sour cream, shredded carrots, chopped radishes, parsley, salt, and pepper.
  4. Fill each cucumber slice with the prepared mixture.
  5. Serve the remaining mixture as a dip alongside the cucumber bites.
