Ingredients

  • 1 to 1 1/2 lb. ground beef
  • 2 Tbsp. shortening
  • 1 c. instant rice
  • 1 envelope onion soup mix
  • 1/2 tsp. salt
  • pepper
  • 1 can cream of mushroom soup
  • 2 c. water

Instructions

  1. Shape ground beef into 4 patties.
  2. Melt shortening in a heavy skillet over medium heat.
  3. Remove skillet from heat.
  4. Spread rice and onion soup mix evenly over the bottom of the skillet.
  5. Arrange the beef patties on top of the rice mixture.
  6. Sprinkle salt and pepper to taste over the patties.
  7. Combine cream of mushroom soup with water until smooth.
  8. Pour the mushroom mixture over all ingredients in the skillet.
  9. Cover and simmer over medium heat for 20 to 30 minutes, or until the meat patties are cooked through.
